SHUT THE F UP ENCHILADA CASSEROLE


You guys, I'm like... not even kidding here. A food item with four syllables seems a little labor intensive for your average Thursday night but (1) they are WORTH IT and (2) they require very little effort. I am freaking out here and stuffing my face and I'm actually looking forward to the bounty of leftovers in my refrigerator for once!

INGREDIENTS:

Corn tortillas (about 6-8)
Cheddar cheese, grated (You don't even need that much! I didn't even put that much in and they were delicious! AND HEALTHY! Like 1/4 cup!)
Onion (1 large, diced)
Garlic (to taste—a few cloves)
Vegetables: I used zucchini, beets (from a can, even!) and mushrooms
Black Beans! (half a can—or whatever!)
Can of diced tomatoes
Chilies (pickled, green, a small can's worth)
Hot sauce (The green kind! Be careful! Don't dump half the bottle in like I did!)
Olive oil (for cooking the veg in)
Fresh cilantro, chopped
Cumin, chili powder, pepper, salt

Saute everything in a pan (except the tortillas and the cheese). Layer the cooked veg in between corn tortillas and cheese in a glass Pyrex dish. Cook it at 400 or so until the cheese is bubbling. YUM, you guys!
