Dr. Soup


Here is something that is easy to make: soup. Here is something that is easy to make but time-consuming: soup. Here is what I like to do: buy a can of soup, and, as my Dad would say: "doctor it up." I have all kinds of tricks for making canned or boxed soups taste better—and speaking of "doctor," healthier!

Pictured above we have a can of Amy's Organic Chunky Tomato Bisque, which is pretty good on its own. To doctor it up, and make it a bit heartier, I added:

Spinach leaves
Garlic powder
Hot pepper flakes
Fresh Rosemary
Splash of red wine

[And some simple cheddar quesadillas on the side.]

Another version I like to make is a Southwestern style tomato soup:

Can of tomato soup (organic)
1/2 can of corn
1/2 can of black beans
Dash of cumin powder
Twist of fresh black pepper
Dab of hot sauce

This makes the soup heartier—fiber and protein!

Third option: Indian Squash Soup,

Box (or can) of organic butternut squash soup
2 Teaspoons (to taste) of any sort of curry powder
1/2 can of chick peas
And even....1/2 can of coconut milk
Cup of quinoa, if you want it!

Conclusion: you can (and should) add spinach to everything. Dinner can be fast, easy and super-healthy. And hot, which is necessary now that it is December!
