Midnight Snack

I am basking in the warm light of unemployment this summer, which is good for the spirit but bad for the pocketbook. I have been all over the place, cultivating my free spirit and wasting money on popsicles. One of my breezy adventures took me south, to New Jersey, where I delighted in the day-long concert presented by Lilith Fair - delighted in Sarah McLachlan's vocal prowess but my stomach grumbled as I considered my dinner options. Ms. McLachlan's encore number, "Ice Cream," while delightful, reminded me that "ice cream" was my only viable dinner option at the PNC Center. [Dinner options, not GF: hot dog, hamburger, chicken finger, french fries. Frozen margarita, in guitar-shaped plastic container: $14.] Nary a taco stand in sight - nary a leaf of lettuce in the entire pavilion. So by the time we got back to friend M's apartment, I was experiencing a crisis of blood sugar.

Her cupboard was filled with tasty snacks - pretzels, pita chips, Triscuit crackers. But nothing gluten-free. The only thing we could scrounge up? A hard-boiled egg. Let me tell you - a little salt, a little pepper, (a little cumin?) this makes a fantastic midnight snack. Never underestimate the power of the little egg.
