Unbelievably Lazy 'Granola'


I have long desired to be the kind of person who makes their own granola. I have long had the package of Bob's Red Mill Gluten-Free Rolled Oats in my cabinet. This morning I woke up to the horror of having run out of cereal, so I decided to cook breakfast instead of doing my taxes.
So I Googled "granola recipe" and found this one from the New York Times, on the Bitten Blog. Turns out there are ADORABLE mini-videos of Mark Bittman cooking. For someone who doesn't have TV, this is amazing. I am continually inspired by his commitment to easy cooking; he bakes a "chicken cobbler" instead of a pot pie as rolling out puff pastry is just too much. This attitude inspired today's granola.

Realizing I had none of the ingredients except oatmeal, I Googled: "toasted oats." Then I invented my own breakfast cereal! Note: this would definitely be better with nuts and dried fruit. Note: maybe you don't have any nuts or dried fruit. (I am ashamed.) (I am over it.)

1 apple (Granny Smith, preferably)
butter
honey
oats
cinnamon
cardamon
pinch of salt


I heated up the butter in the pan and threw the diced apple into ol' faithful, the Cast Iron Pan. After it softened a little I added a whole bunch of oats. Then I drizzled some honey over it with the idea of caramelized sugar. WARNING: this will burn! Stir frequently, do not go back to the dining room table to check Twitter. Then I dumped it over yogurt. I would really recommend waiting for it to cool off but I was too hungry. Warm yogurt is pretty weird.

The more honey, the better.

It really could have used some walnuts.
