
Friends of mine who are teachers have the day off. One of them is gluten free and just requested some advice about making french toast. No, I am not upset. I love drinking cold coffee at my desk.
I also love french toast. Usually I eat it for dinner when I am feeling blue or lazy or both. I am in the habit of buying the Food for Life gluten-free brown rice bread. It's not really super-great but I am used to it and have learned to enjoy it. It is tiny and dense and needs, in my opinion, to be burnt to a toasty crisp to be enjoyed, as I like it, with peanut butter. Anyway, I take:
2 eggs
1 teaspoon vanilla extract
1-2 tablespoons milk
and whisk, and soak the bread for as long as possible (before I hungrily give up and throw it on the cast-iron pan, in butter).
I also like to cut up some apples and saute them alongside.
Then I sprinkle cinnamon and cardamon on top of both items in the pan.
Here is the secret: when one side is lacy brown, pick it up with a fork and DOUBLE DIP it back into the egg batter. As shown:
