
It is TOO HOT for food. Not that this will stop me from eating! It is just the kind of weather that requires staying OUT of the kitchen. I had half a head of cabbage and I remembered my Dad's cole slaw recipe - using yogurt, instead of mayonnaise, which I do not like. He cuts the cabbage into big pieces, adding green apple, salt, pepper, and sometimes raisins. It is DELICIOUS.
Variation on a theme: I didn't want to think that I was just eating COLE SLAW for dinner so I call this salad instead. I googled: YOGURT DRESSING and found several recipes suggesting a blend of plain yogurt and dijon mustard. Cooking is easy!

YOGURT DRESSING
A few spoonfuls PLAIN YOGURT
Tablespoon DIJON MUSTARD
Dash of TURMERIC
Dash (gf) SOY SAUCE
Dash MAPLE SYRUP
SALT & PEPPER
I stirred this up real good and added:
SHREDDED CABBAGE
AVOCADO CHUNKS
GREEN APPLE SLIVERS
GREEN ONION, DICED
The second salad is simply:
CUCUMBER, thinly sliced
BALSAMIC VINEGAR
(SALT & PEPPER)
Which is my favorite way to eat cucumbers on a VERY HOT DAY. ON MY STOOP.
Like instant pickles!
*NOTE - I made this again tonight and instead of SLICING the cucumbers (v. tedious) I used the vegetable peeler to make thin strips of cucumber - like a cold pasta salad! Recommended.
